Description

Tasty salty muffins!

Ingredients

  • 2 Tablespoons Olive Oil
  • ½ cups Frozen Green Peas
  • 5 leaves Fresh Mint
  • ¾ cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 2 whole Small Eggs
  • ½ cups Milk
  • 4 Tablespoons Butter, Melted
  • 2 teaspoons Salt, Divided
  • ½ teaspoons Ground Black Pepper
  • ½ cups Grated Parmesan Cheese
  • 1-⅞ ounces, weight Ham

Preparation

In a pan, heat up the olive oil and throw in the frozen pea., Add some fresh mint, about 2-3 tablespoons of water and 1/2 teaspoon of salt. Cover with a lid and let cook for about 15 minutes, or until peas are done.

Meanwhile, in a bowl, sift flour and baking powder.

In a separate bowl, combine eggs and milk. Pour in the melted butter, and beat together with a whisk. Add the remaining salt and pepper. Stir well, then add the grated parmesan cheese.

Pour the wet ingredients into the the flour. Chop up some ham and add the ham and the cooked and cooled down peas into the mixture. Stir well until all ingredients are well combined.

Divide the mixture into 11 muffin cups. Bake at 180ºC (375ºF) for about 30 minutes. Remove from the oven and let them cool down before serving!
