Description

This easy recipe is quick to put together and such a show-stopper! It’s perfect for a party, brunch, or to accompany a fresh green salad. Simply roll, spread, fold, spread, and top with veggies.

It’s easy on the eyes and a treat for the taste buds!

Ingredients

  • 1 pound Refrigerated (or Frozen) Pizza Dough
  • 6 ounces, weight Soft Goat Cheese, Or Herb Cheese Spread
  • ¾ cups Grated Parmesan Cheese
  • 3 Tablespoons Fresh Chopped Dill, Divided
  • 1 whole Small Red Onion, Sliced Thinly
  • 1 whole Small Zucchini, Sliced Thinly
  • 2 whole Small Tomatoes, Thinly Sliced
  • 1 whole Small Red Pepper, Thinly Sliced Into Rings
  • 1 Tablespoon Olive Oil
  • Salt And Pepper

Preparation

Preheat the oven to 400 degrees F. Roll the dough into a large rectangle and place on a piece of parchment paper sprayed with non-stick spray.

Spread half the goat cheese onto one half of the dough. Sprinkle with half the Parmesan cheese and half the dill.

Carefully fold the other half of the dough on top of the cheese. Spread and sprinkle remaining goat cheese and Parmesan.

Layer the veggies over the top, creating a pretty pattern. Brush olive oil over the top of the veggies and sprinkle with salt, pepper, and remaining dill.

Bake for 22–25 minutes, until edges are medium brown. Cut in half lengthwise. Then slice in long 2-inch slices and serve warm.

Makes approximately 12 pieces.

Delicious! We altered the recipe a bit… my husband doesn’t like goat cheese (although its one of my favs!), so I conceded and used feta. We also used dried dill and didn’t follow the folding directions – rather just made it like a regular pizza. The flavors tasted great together!

This looks really good. I love to cook with goat cheese and zucchini. Check out one of my recipes, I have a similar veggie flat bread pizza, has a little more topings on it. :)

Filing this one away till summer when I have a surplus of tomatoes and zucchini to use, it sounds FANTASTIC! I think fresh basil would also be great on if you didn’t have dill. Is it summer yet?! :)

I made this last night while the hubby was away and it was delicious! I used a pre-made flat bread instead of pizza dough and used a shallot instead of onion because those were both what I had and it was great!!! Goat cheese with anything is pretty much a winner in my book!
