Description

Keep this batter in the fridge for a fresh baked muffin every day of the week!

Ingredients

  • ½ cups Oil
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 cups Buttermilk Or Substitute Half Plain Yogurt And Half Milk
  • 4 cups Raisin Bran Cereal
  • 2 cups Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt

Preparation

Mix ingredients in the order listed and bake in a muffin tin at 400ºF for 12-20 minutes, depending on pan size. (My large muffin tin took about 18 minutes).

Let cool at least 10 minutes. Top with butter and honey.

Save leftover batter in the refrigerator. For individual servings, scoop into a ramekin/mug and microwave for 1 minute.

Great recipe, I love that I can make just a few in the microwave.

I have been converted to a raisin-lover! I just made these and had to make one in the microwave to taste…YUM! I used applesauce and flax seed in place of the oil and egg yolks. I also used raw sugar…these are a keeper. I made them for the hubs…but he might not even get one. Thanks for a great recipe!
