Description

These muffins are so moist and flavorful. You would never know there is no oil or butter in them.

Ingredients

  • FOR THE MUFFINS:
  • 1-½ cup White Whole Wheat Flour
  • 1 cup Rolled Oats
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Sea Salt
  • 1 teaspoon Pumpkin Pie Spice
  • ½ cups Brown Sugar
  • 3 Tablespoons Maple Syrup
  • 1 whole Egg
  • 1 cup Pureed Pumpkin
  • 1 whole Banana, Mashed
  • ½ cups Milk
  • ½ cups Walnuts, Chopped
  • FOR THE CINNAMON MAPLE GLAZE:
  • ¼ cups Maple Syrup
  • ¼ cups Nonfat Vanilla Yogurt
  • 3 Tablespoons Milk
  • ½ teaspoons Cinnamon

Preparation

Preheat oven to 375ºF. Spray a standard muffin tin with cooking spray. Set aside.

In a large bowl combine all dry ingredients (flour, oats, baking powder, baking soda, salt, pumpkin spice, brown sugar).

In a medium bowl combine all remaining muffin ingredients, except walnuts. Whisk well to combine.

Pour wet mix into dry mixture and combine well. Fold in walnuts. Pour into muffin tin.

Bake 20 minutes or until a toothpick inserted comes out clean. Cool on wire rack 10 minutes.

Meanwhile make the cinnamon glaze. Whisk syrup, yogurt, milk, and cinnamon together. Drizzle on muffins.
