A yummy bran muffin perfect for the fall but great any time of the year!
Preheat oven to 350ºF and line muffin tins.
In one bowl, mix together flour, baking powder, baking soda, salt, and spices.
In a second bowl, mix together eggs, pumpkin, brown sugar, and applesauce.
Stir dry into wet ingredients. When almost mixed, add wheat germ and incorporate.
Scoop into muffin liners. Sprinkle on pumpkin seeds (optional). Bake for 20 minutes or until inserted toothpick comes out clean.
