Description

This moist pumpkin bread, made with pumpkin pie filling, is the perfect snack for a brisk fall morning but delectable enough to serve as an after dinner treat.

Ingredients

  • FOR THE STREUSEL:
  • 1 cup All-purpose Flour
  • ½ cups Firmly Packed Light Brown Sugar
  • 1 stick Melted Butter
  • 2 teaspoons Cinnamon

  • FOR THE PUMPKIN BREAD:
  • 2 whole Eggs
  • ⅓ cups Cold Water
  • ½ cups Oil
  • ½ cans Pumpkin Pie Filling
  • 1-¾ cup All-purpose Flour
  • 1-½ cup Granulated Sugar
  • 1 teaspoon Baking Soda
  • ¾ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ½ teaspoons Nutmeg

Preparation

Preheat oven to 350°F. Coat a 9 x 5 x 3-inch loaf pan with cooking spray.

Streusel: Combine flour, light brown sugar, melted butter and cinnamon in a medium bowl. Stir with a fork until crumbly.

Pumpking Bread: Beat eggs, add water, oil, and pumpkin pie filling. In a separate bowl combine flour, sugar, baking soda, salt, cinnamon, and nutmeg. Add the wet ingredients to the flour mixture and fold just until dry ingredients are moistened. Spoon mixture into the prepared pan and sprinkle streusel topping on top.

Bake for 1 hour or until a knife comes out clean when inserted in the middle of the bread.

So, so good!!! Also worked great when I used apple sauce instead of the oil.

What size can of pumpkin? Your recipe says 1/2 cans.

I have made this recipe two times already since I found it. It is a very simple recipe, however, I found that the streusel topping cooked too quickly. So the second time I cooked the bread for 20 minutes and then added the topping, that worked a little better, but I put too much batter into my loaf pan and it spilled over the sides making it a challenge to pull it out. My husband and family loved it! I highly recommend it!! I also agree with the comment above about making the streusel more sweet, I used less flour and a tad more sugar ;)

I just made this recipe for my family and overall it is very tasty. The streusel topping could have a bit more sweetness to it, but other than that, a very tasty bread.
