Description

A healthy breakfast bread made with Naked Juice, oatmeal, banana and chock full of blueberries.

Ingredients

  • 1 whole Banana, Mashed
  • 1 cup Naked Juice Power Garden Berry Veggie
  • ½ cups Granulated Sugar
  • 2 whole Eggs Or 1/2 Cup Egg Substitute
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Coconut Oil Or Canola Oil
  • 1 cup Whole Wheat Pastry Flour
  • 1 cup All-purpose Flour
  • ½ cups Oats
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Blueberries, Fresh Or Frozen

Preparation

Preheat oven to 350ºF. Spray 1 large loaf pan or 3 mini loaf pans with cooking spray; set aside.

In a medium bowl add banana, Naked Juice, sugar, eggs, vanilla extract and oil; mix until blended.

In the same bowl, add flours, oats, baking powder, baking soda and salt; mix until just combined. Fold in blueberries.

Spoon batter into prepared loaf pans. Bake for 50 minutes to 1 hour for 1 large loaf or 30–40 minutes for 3 mini loaves (mini loaves took 35 minutes), or until a wooden pick inserted into center comes out clean, shielding with aluminum foil in the final 5 to 10 minutes if necessary to prevent excessive browning.

Cool in pan on a wire rack 10 minutes; remove from pan to wire rack.
