Description

Super easy with lots of good-for-you fiber, potassium and lots of omega-3 love.

Ingredients

  • 1 cup Whole Wheat Flour
  • 1-½ cup Instant Oats
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • ½ cups Brown Sugar
  • ½ cups Applesauce
  • 2 whole Eggs
  • 5 whole Bananas, Mashed
  • 1 cup Chopped Walnuts

Preparation

Preheat oven to 350 degrees F. Grease and flour one loaf pan.

Mix together flour, oats, baking powder, baking soda and salt. Set aside.

In a separate bowl, mix together brown sugar and applesauce. Add eggs one at a time. Stir in mashed bananas. Slowly add dry mixture to wet ingredients until combined. Mix in walnuts. Pour into prepared pan and bake for 58 minutes until set. Cover with aluminum foil to protect the top from burning after 50 minutes if not done.

this bread is really hearty! it’s not as sweet as I’m used to banana breads being, but overall the flavor was quite good. we love that it was super healthy. if we were to make it again, per the suggestion of a friend, we’d probably put it in muffin tins. it’s so dense that those would be the perfect size for breakfast. also, it’d encourage it to set a bit quicker. the bread ended up being in the oven for well over an hour! otherwise we followed the recipe as written and found it came together easily. thanks for sharing this one!

I made this last night for breakfast so I would have something easy to eat while getting ready for work and MMMMM! This is wonderful! Not too sweet, full of flavor, and healthy! I only had cinnamon applesauce, which worked great, and my husband had eaten one of my bananas, so I only used four. I added a bunch of ground flax seed to give it a health boost. Excellent recipe!!!

I LOVE how healthy this banana bread is. I didn’t have instant oats, so I ground up some quick-cooking oats in the food processor, and it turned out fine. I also added a tablespoon of ground flax seed, and since I didn’t have five bananas (only four), I added a bit more applesauce instead.

The only thing that would make this banana bread better is a teaspoon of cinnamon for some spice!

I will definitely be adding this into my morning coffee rotation of snacks! Thanks for sharing.

turning my comment into a review! we made these this time as muffins and it works great. we followed the recipe exactly, and put about a 1/4 cup of batter in each muffin tin. it made 24 and total baking time was about 17 minutes, rotating the pans halfway through. great to grab and go in the morning!
