Description

My mom has been making this coffee cake for years. It’s fun to watch her make it ’cause she doesn’t look at the recipe or measure anything. I love it! It’s a great recipe because, unlike most coffee cake recipes, it is super fast to make and doesn’t make a ton of it.

Ingredients

  • FOR THE CAKE:
  • 1-½ cup Flour
  • ½ cups Sugar
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ⅛ teaspoons Salt
  • 1 whole Egg
  • ¼ cups Oil
  • ⅔ cups Milk
  • _____
  • FOR THE TOPPING:
  • ¼ cups Brown Sugar
  • ½ teaspoons Cinnamon
  • 1 Tablespoon Flour
  • 2 Tablespoons Soft Butter
  • 1 cup Chopped Nuts (optional)

Preparation

Preheat oven to 350ºF. Spray a 9” cake pan with cooking spray or coat with butter.

In a medium mixing bowl whisk together flour, sugar, baking soda and powder and salt. Add egg, oil and milk and mix into the dry ingredients. Pour into the cake pan.

To make the topping mix together the brown sugar, cinnamon and flour. Cut in the butter with a fork until crumbly. Sprinkle over the top of the cake batter, then sprinkle chopped nuts over the top of that. I also sometimes like to add a little extra brown sugar over the top.

Bake for 20 minutes or until a toothpick inserted in the center comes out clean.

This looks exactly like a coffee cake my aunt makes and she won’t share her recipe! I can’t wait to try it.

Thank you, thank you for a recipe that fits a smaller, square cake pan. Seems every recipe out there is for a large cake (13×9 pan) which makes way, way too much for a family of two. I love coffee cake. I’ll have to give this one a try.

This seemed a little too dense and didn’t have a lot of flavor in my opinion.
It wasn’t bad, just not enough depth.
