Description

Filled with fresh blueberries and bursting with just the right amount of flavor, these Mini Blueberry Loaves are soft, moist and perfect for breakfast.

Ingredients

  • 2 cups All-purpose Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • 1 pinch Salt
  • ¼ cups Coconut Oil, Melted
  • ¾ cups White Sugar
  • 1  Egg
  • 1 cup Vanilla Greek Yogurt
  • ½ teaspoons Vanilla Extract
  • 1-½ cup Fresh Blueberries
  • 2 cups Milk Chocolate Chips

Preparation

Preheat oven to 375 F. Lightly spray 12 mini loaf tins with non-stick cooking spray. Set aside.

In a medium bowl, combine the flour, baking powder, baking soda and salt. Set aside.

In a large bowl, combine the oil, sugar, egg, yogurt and vanilla. Using an electric hand mixer or stand mixer with fitted paddle attachment, beat until smooth. Add the dry ingredients and mix on low until mostly combined. Gently fold in blueberries. The batter will be very thick.

Pour mixture into prepared tins and bake for 15-18 minutes or until loaves are browned on top. Remove from oven and allow to cool. While loaves are cooling, prepare chocolate glaze.

Microwave chocolate chips for 1 minute, stirring every 15 seconds so they don’t burn. Once chocolate is smooth, drizzle over loaves.

Serve immediately or cover until ready to serve. Enjoy!
