Description

This is another campfire recipe. A sweet take on cornbread.

Ingredients

  • 1 Tablespoon Butter Or Margarine
  • 1 cup Flour
  • ¾ cups Cornmeal
  • 2 Tablespoons Sugar
  • 2-½ teaspoons Baking Powder
  • ¾ teaspoons Salt
  • ½ cups Chopped Walnuts
  • 2 whole Eggs, Beaten
  • 2 Tablespoons Pure Maple Syrup
  • 1 cup Milk
  • ¼ cups Cooking Oil
  • 1 teaspoon Maple Flavoring

Preparation

This is a campfire recipe. Before leaving home, it might be easiest to at least mix the dry ingredients up in a Ziploc bag so you don’t have to feel like you are taking your whole kitchen with you.

Heat up about 25 coals. Place the tablespoon of butter in a 10-inch Dutch oven and heat it up until melted.

While waiting for your butter to melt, combine flour, cornmeal, sugar, baking powder, salt, and walnuts. In a separate bowl, combine the remaining ingredients. Add to the dry ingredients and stir until just mixed. Once the butter is melted, pour the batter into the Dutch oven. Don’t stir!

Cook with 14 coals on top and 8 coals on the bottom, periodically rotating the lid and the base of the Dutch oven to prevent hot spots. We baked this for 25-30 minutes.

If you want to make this inside & at home. Use a 9×9 square cake pan instead of a D.O. Melt the butter in your cake pan, pour the batter in the cake pan, bake at 375° for 25 minutes.
