Inspired by an empty fridge, made with lemonade and pantry staples.
Preheat oven to 350ºF.
In a bowl, melt the butter and sugar. Cream together. Stir in egg, chia seeds, and vanilla extract. Add in milk and lemonade. Stir until the consistency is uniform (and liquid).
Add in the flour, baking powder and salt while mixing. Mix until batter reaches a uniform consistency.
Divide the batter between 6 oiled muffin cups. Bake at 350ºF for 15 – 20 minutes.
