Description

Sometimes called Mexican Cornbread, this cornbread combines some great south-of-the-border flavors.

Ingredients

  • 1 package (8.5 Oz) Jiffy Corn Muffin Mix
  • 1 whole Egg, Beaten
  • ⅓ cups Milk
  • 1 can (15.2 Oz) Whole Kernel Corn, Well Drained
  • 1 cup Sharp Cheddar, Grated
  • ½ cups Onion, Finely Diced
  • 1 can (4 Oz.) Green Chiles
  • 2 teaspoons Chili Powder
  • ½ teaspoons Salt

Preparation

Preheat oven to 350 degrees (F) and grease a 12-count muffin tin.

Combine all ingredients in a medium bowl and mix with a spoon until just combined. Divide batter into 12 well greased muffin tins. Bake 25-30 minutes or until golden brown and set.
