Description

A recipe from my grandma for tasty, fluffy zucchini bread!

Ingredients

  • 1 cup Sugar
  • ½ cups Vegetable Oil
  • 2 whole Eggs
  • 1 teaspoon Grated Lemon Peel
  • 3 Tablespoons Fresh-squeezed Orange Juice (approx. 1/2 Orange) Or 1/2 Teaspoon Orange Extract
  • 1-½ cup Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Ground Ginger
  • ¼ teaspoons Cinnamon
  • 2 teaspoons Baking Powder
  • 1-½ cup Grated Unpeeled Zucchini
  • ½ cups Chopped Pecans

Preparation

Preheat oven to 375°F.

Beat sugar, oil, egg, lemon peel, and orange juice or extract until well blended. Add the sifted dry ingredients and zucchini alternately and mix well. Stir in nuts. Pour into a greased loaf pan. Bake for 55 minutes.
