Description

A moist and gluten-free bread!

Ingredients

  • ⅓ cups Applesauce
  • ⅔ cups Brown Sugar
  • 2 whole Large Eggs
  • 1 teaspoon Vanilla
  • 1-¾ cup Gluten-free All Purpose Baking Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Xanthan Gum
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1-½ cup Mashed Banana
  • ½ cups Chopped Pecans

Preparation

-Start by preheating the oven to 350 degrees F.

-Grease a bread loaf pan, or several mini pans (makes 1 large 9 by 5 loaf).

-Cream together the applesauce, sugar, eggs and vanilla in a large bowl.

-Once the above ingredients are mixed well, add the flour, baking powder, xanthan gum, salt and cinnamon. While mixing in the dry ingredients, alternate mixing in the mashed banana as well.

-Finally, add in the 1/2 cup chopped pecans and mix to combine.

-Pour the mix into the greased loaf pan and bake for 45-55 minutes (mine took 50 minutes). Enjoy!
