Description

Serve these as a complement to my Roasted Tomato Soup (see my TastyKitchen recipe box for the recipe). They’re delicious!

Ingredients

  • 4 cloves Garlic, Minced
  • 2 Tablespoons Grated Parmesan
  • ½ cups Olive Oil
  • 1 pound French Loaf, Cut Into Bite-sized Cubes
  • Salt And Pepper, to taste

Preparation

1. Heat oven to 275 F.

2. Puree garlic, Parmesan and olive oil in a food processor.

3. Place the bread cubes in a mixing bowl and toss by hand with the garlic mixture and a few generous pinches of salt and pepper. Toss the bread cubes well with one hand and continue adding the oil mixture so that each cube is coated evenly. Be careful not to over-saturate the bread cubes.

4. Place the bread cubes on a rimmed baking sheet in a single layer. Bake them for 20 minutes, then remove pan from the oven, turn them with a spatula and return to the oven. Bake for another 20 minutes then remove pan from the oven, turn them with a spatula and return to the oven. Continue to bake for a final 20 minutes. Croutons will be crispy and golden brown when finished.
