Spoon bread is typically a moist cornmeal-based dish very prevalent in the South. Even though it has bread in the name spoon bread’s consistency is more like a savory pudding or cornmeal souffle. I decided to really “twist” this one up and make an easy, tasty bread.
Preheat oven to 350 F. Pour the melted butter in the bottom of an 8×8 baking dish. In a medium-sized bowl mix the biscuit mix, sour cream and lemon lime soda. This is a very sticky dough. Spoon the dough into the baking dish and pat it around until it is fairly evenly distributed over the entire pan. Bake for 15-20 minutes just until it starts to brown slightly. Serves 6.
