Description

Sweet, incredibly moist, extremely easy and in the oven in 5 minutes. These are dangerously delicious!

Ingredients

  • 1 package (18 1/4 Oz. Size) Yellow Cake Mix
  • 1 can (15 Oz. Size) Pumpkin Puree
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Ground Nutmeg
  • ¼ teaspoons Ground Cloves
  • ½ cups White Sugar
  • 1 teaspoon Cinnamon, Heaping
  • ¼ cups Unsalted Butter, melted

Preparation

1. Preheat the oven to 350 F. Put 12 paper liners into a standard size muffin tin, or thoroughly grease the muffin tin.

2. Mix together the cake mix, pumpkin puree, first amount of cinnamon, nutmeg, and cloves in a large bowl. Using a cookie scoop (to measure evenly) or a large spoon, spoon the batter evenly into the lined or greased muffin tin.

3. Bake for 20-25 minutes or until a toothpick inserted into the muffin comes out clean. Remove from oven.

4. Let the muffins cool for 5-10 minutes. To make the cinnamon sugar, mix the sugar and second amount of cinnamon in a small bowl. Once the muffins are cool enough to handle, dip in the melted butter, then into the cinnamon sugar. Enjoy!

Notes: I have not done this, but tons of recipes use a spice cake mix and omit the cinnamon, nutmeg, and cloves in the muffin batter. The muffins should stay moist for 2-3 days.
