Description

Muffins that are moist, sweet and a bit crunchy.

Ingredients

  • FOR THE MUFFINS:
  • ½ cups Flour
  • 1 teaspoon Baking Powder
  • ¼ cups Butter, Unslated
  • 1 whole Egg
  • ½ teaspoons Vanilla Extract
  • 5 Tablespoons Dulce De Leche Cream
  • 2 Tablespoons Canola Oil
  • 3 Tablespoons Milk
  • _____
  • FOR THE FILLING AND TOPPING:
  • 6 teaspoons Dulce De Leche
  • 1 Tablespoon Coconut Flakes
  • 3 whole Caramellized Pecans, Cut In Half

Preparation

For the muffins, in a bowl combine flour and baking powder. Melt butter; beat in the egg, vanilla extract and dulce de leche cream. Stir well.

Pour wet ingredients into the dry, stirring well. Add the canola oil and milk. This will make your muffins super moist!

Place paper liners into 6 muffin cups. Pour about 1 tablespoon of batter in each muffin cup. Add 1 teaspoon of dulce de leche (for the filling) in the center, then cover with an other tablespoon of batter.

Decorate with coconut flakes and half a caramelized pecan. Bake at 180ºC for about 20–25 minutes.

Let cool. Enjoy.

I am planning on making these muffins this weekend, they sound amazing. You stated that they need to be baked at 180 degrees c does that equivilate to 350 degrees on a regular oven, Thanks
