Description

These rolls are easy to make, healthy and delicious!

Ingredients

  • 1 Tablespoon Yeast
  • ½ cups Warm Water
  • 5 Tablespoons Powdered Honey, Divided
  • 1-¼ cup Milk
  • 5 Tablespoons Unsalted Butter, At Room Temperature, Plus Extra For Brushing On The Rolls After Baking
  • 2 whole Large Eggs
  • 1 teaspoon Pink Salt
  • 4-¾ cups White Spelt Flour, Or As Needed

Preparation

Preheat oven to 400 F. Set two 12-count muffin tins aside.

Measure out yeast and put it into 1/2 cup of warm water. Pour 1 tablespoon of powdered honey over it and set aside.

Put the milk into a microwave-safe dish. Scald milk by microwaving it for 2 minutes. Add butter and melt it into the milk. Set it aside and let cool.

Meanwhile, beat eggs with a fork in a large bowl. Add the remaining 1/4 cup (4 tablespoons) powdered honey and salt. Pour milk and butter mixture into the bowl. Mix together and let cool if still warm.

Add yeast mixture to the cooled mixture. Add 4 or more cups of flour and mix until dough has the right consistency. It shouldn’t be sticky. Knead dough for 5 minutes. Cover with a towel and place in a warm area to let it rise for 25-30 minutes.

Pinch out 1-inch sized smooth balls and place 3 together into each well in a muffin pan (recipe makes roughly 24 rolls, each consisting of 3 balls). Bake at 400ºF for 8-10 minutes. Brush with butter when out of the oven and serve.
