Description

Banana nut bread with a cake-like consistency and a yummy crumbly topping.

Ingredients

  • FOR THE BREAD:
  • ¾ cups Unsalted Butter, Softened
  • 8 ounces, weight Cream Cheese, Softened
  • 2 cups Sugar
  • 2 whole Large Eggs
  • 3 cups Cake Flour
  • 6 Tablespoons Cake Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1-½ cup Bananas, Mashed (about 4 Bananas)
  • 1 cup Walnuts, Chopped
  • ½ teaspoons Vanilla Extract
  • FOR THE TOPPING:
  • ½ cups Light Brown Sugar
  • ¼ teaspoons Cinnamon
  • ½ cups Walnuts, Chopped
  • 1 Tablespoon Cake Flour
  • 1 teaspoon Cake Flour
  • 1 Tablespoon Butter, Melted

Preparation

Preheat oven to 350 F. Spray two 8″x4″ loaf pans with non-stick cooking spray and set them aside.

Put butter and cream cheese in a large bowl. Using a mixer, mis at medium speed until creamy. Gradually add sugar, mixing until fluffy. Add eggs one at a time, mixing in between. Mix just until blended. Set aside.

Combine flour, baking powder, baking soda and salt in a medium-sized bowl. Gradually add this into the butter mixture. Mix at low speed just until blended. Stir in bananas, walnuts and vanilla. Divide batter between the two loaf pans.

Mix topping ingredients together in a medium-sized bowl and sprinkle it evenly over both loafs.

Bake for 1 hour, covering the loaves with a sheet of foil for the last 15 minutes to prevent browning. Then remove the bread from the oven, remove the foil and allow bread to cool in the pans for 10 minutes on a wire rack. Remove bread from pans and let the loaves cool on wire racks for 30 minutes before slicing.
