Description

Want to know a secret? I have a secret love affair for the combination of orange and cranberry. Pair it with banana and it’s pure heaven. This bread is so moist. Ant with no eggs or oil in it, it’s very healthy. If you are a fan of cranberries and bananas then you must try this bread. It’s so mmm, mmm, good!

Ingredients

  • 1 cup All-purpose Flour
  • ½ cups Whole Wheat Pastry Flour
  • ½ cups Sugar
  • 2-½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Egg Substitute Or 2 Eggs
  • ½ cups Unsweetened Applesauce
  • 1 teaspoon Orange Extract
  • ½ teaspoons Vanilla Extract
  • 1 Tablespoon Orange Zest
  • 1 cup Mashed Banana (for 1 Cup You'll Need Approximately 3 Medium Sized Bananas)
  • 1 cup Cranberries, Fresh, Cut In Half

Preparation

1. In a large bowl, mix together the flours, sugar, baking powder and salt until well combined. Set aside.

2. In a separate bowl, mix eggs, applesauce, orange extract, vanilla extract, orange zest and bananas.

3. Stir banana mixture into the flour mixture. Then add cranberries.

4. Stir carefully.

5. Pour the batter into a greased loaf pan and bake for approximately one hour at 350°F. Or you can use 3 mini loaf pans and bake for 30 minutes.

6. Bread is done when a toothpick inserted into the loaf comes out clean.

Makes 18 slices, approximately 6 slices per mini loaf.
