Description

A wonderful banana loaf with a yummy cinnamon and sugar ribbon running through it.

Ingredients

  • 4 whole Very Ripe Bananas, Smashed
  • ⅓ cups Melted Unsalted Butter
  • 1 cup Sugar
  • 1 whole Egg, Beaten
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1-½ cup Plain Flour
  • _____
  • FOR THE CINNAMON RIBBON:
  • ⅓ cups White Sugar
  • 1 Tablespoon Cinnamon

Preparation

Preheat the oven to 350 degrees.

Butter and flour a 9×5 loaf pan.

Mix the bananas, butter, sugar, egg and vanilla. Sprinkle baking soda and salt on top of the banana mixture. Slowly stir in the flour and mix until blended well. Don’t over stir.

Mix the cinnamon and sugar together.

Add half of the batter to the loaf pan. Sprinkle the cinnamon sugar over the mixture, reserving about a tablespoon for the top. Add the remaining batter and top with the reserved cinnamon sugar.

Bake for 45-50 minutes. Cool in the pan for 10 minutes then turn out onto a rack to cool completely.

I noticed that my bananas had gone bad and rather than throw them out went rooting through Tsty Kitchen to find a banana bread recipe with basic ingredients I had around the house. This was it. I am so glad I found this! This bread is delicious, simple and all around perfect. I hope my next banana purchase is big enought that more go over ripe… time to make more bread!

Loved this banana bread- had to add nuts for my husband and I did cut the sugar in half- the first batch I made was a little too sweet for our taste- but it still turned out terrific even with the sugar cut in half. I also used greek yogurt with honey in place of the butter in the second batch just to see how it would work and it was really moist.

Absolutely wonderful! I made this into muffins with a little cinnamon sugar ribbon in each. They made a perfect quick breakfast or snack. My 9 year old and all her little friends were raving! I definitely will be making this again!

I got this recipe from my daughter-in-law after she served it to us one day. She is a great cook, so I wondered if I could make it without it failing (I love to cook, but tend to fail more than succeed). Thrilled with how quick and easy this is to mix and how you can do pretty much everything with one bowl! The best part is how tasty this recipe is. Since it is just my husband and I, usually I make this into muffins and freeze them. I have tweaked a few things…I use whole wheat and white flour, I add some oatmeal and do 1/2 and 1/2 with white and light brown sugar. The original recipe can’t be beat! My recipe adds a little more fiber.

This is my new favorite banana bread recipe! I use 3 1/2 bananas otherwise mine tends to turn out a little too moist. Thanks for sharing this!
