Description

A moist combination of bananas, blueberries and oats in a delicious bread.

Ingredients

  • 1-½ cup All-purpose Flour
  • ¾ cups White Sugar
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ⅔ cups Quick Cooking Oats
  • ½ Tablespoons Ground Cinnamon
  • ½ cups Fat-free Egg Product (or 2 Egg Whites)
  • 1 cup Mashed Banana (about 2-3 Overripe Bananas)
  • ¼ cups Applesauce
  • 1 cup Blueberries, Fresh Or Frozen

Preparation

1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan.

2. In a large bowl, stir together flour, sugar, baking powder, baking soda, oats and cinnamon. Add egg product, bananas and applesauce; stir just until combined. Fold in blueberries.

3. Pour batter into prepared pan.

4. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

5. Cool 10 minutes. Loosen loaf from sides of pan; remove from pan and place on wire rack. Let cool (about 2 hours), before slicing.

I had 3 very ripe bananas and I was out of milk, buttermilk, yogurt or anything like that, so my regular banana bread recipe was out. I wanted to try a recipe with oats in it and while I didn’t have any blueberries I decided to give this recipe a try. I did change/add a few things; I used 1 whole egg, I cup of oats and about 3/8 cup of applesauce, 1/2 teaspoon vanilla, 1/8 teaspoon salt, and sprinkled in some ground cloves and nutmeg too. I couldn’t wait the 2 hours to let it cool completely before trying it, and it is pretty yummy. I think the blueberries would be good in it and maybe even raisins. Thanks for sharing this recipe, it was just what I needed and I didn’t have to go to the store!
