Description

This is a dense, delicious muffin. Perfect for a cold winter morning. This is a favorite on Christmas morning. Enjoy!

Ingredients

  • FOR THE MUFFINS:
  • ¼ cups Butter
  • ¼ cups Vegetable Oil
  • ½ cups Granulated Sugar
  • ⅓ cups Brown Sugar
  • 2  Large Eggs
  • 5-½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • 1 teaspoon Ground Nutmeg
  • ¾ teaspoons Salt
  • 1 teaspoon Vanilla
  • 7-⅓ cups All-purpose Flour
  • 1 cup Whole Milk
  • FOR THE TOPPING:
  • ½ cups Butter, Melted
  • 1 cup Sugar
  • 2 Tablespoons Ground Cinnamon

Preparation

Preheat the oven to 425°F. Lightly grease a standard muffin tin.

In a medium-sized mixing bowl, cream together the butter, vegetable oil and sugars till smooth. Add the eggs, beating to combine. Stir in the baking powder, baking soda, nutmeg, salt, and vanilla.

Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.

Spoon the batter evenly into the prepared pan, filling the cups nearly full.

Bake 15 to 17 minutes.

For the topping: Put the butter into a medium sized bowl and melt it in the microwave. In another bowl combine the sugar and cinnamon.

Remove muffins from the oven, and let them cool for a couple of minutes.

Roll entire muffin in the melted butter then immediately roll it in the sugar mixture.

Serve warm.

Although they tasted good, I’m not sure what they are. The flour to liquid ratio did not produce a batter but a dough. So I had to lobe off hunks of dough and put into the muffin tins. They baked up ok but definitely not muffin like, more biscuit like.
Sharon, can you let me know if it is more dough like than batter so I know if I came up with the right consistency?
