Description

Easy, delicious banana bread with hints of cinnamon and almond.

Ingredients

  • 6 Tablespoons Butter
  • ½ cups Brown Sugar
  • ½ cups White Sugar
  • 1 cup Sour Cream Or Yogurt
  • 1 teaspoon Almond Extract
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 2-¼ cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 2 Tablespoons Additional White Sugar
  • 3 whole Ripe Bananas
  • 2 whole Eggs

Preparation

Preheat oven to 300°F. In a large bowl, cream together butter and sugars until well combined. Set aside.

In a medium bowl, mash peeled bananas with a fork and stir in sour cream or yogurt, vanilla and almond extracts, eggs, and cinnamon. Beat the banana mixture into the butter mixture until combined.

Add the flour, baking soda, and salt into the bowl and stir until thoroughly mixed. Pour the batter evenly into two greased standard size loaf pans and sprinkle additional sugar over the top of the batter.

Bake for about 60 minutes or until a toothpick inserted in the center comes out clean. Alternately, bake in greased muffin tins for about 20-25 minutes (makes at least 24 regular size muffins).

I was hoping the almond would be more of a stand out in this banana bread, but it was very subtle. I found the texture to be a bit crumbly, but overall, it was a tasty bread.
