This chocolate zucchini bread is moist and rich, and suprisingly healthy!
Preheat oven to 350ºF. Lightly grease a loaf pan.
Grate the zucchini and set aside. In a large mixing bowl, combine flour, cocoa powder, baking soda, baking powder, salt and cinnamon.
In another bowl, beat together the oil, applesauce, sugars, buttermilk and vanilla.
Fold in the grated zucchini with the wet ingredients.
Add the flour mixture and beat until just combined. Stir in the chocolate chips.
Pour the batter into the loaf pan and bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Remove after 10 minutes and let cool completely before you slice.
