Description

No need to make a trip to Costco for their chocolate muffins when you can make them at home, serve them hot and fresh out of the oven. Chocolatey and moist, these are a great breakfast treat, snack or dessert.

Ingredients

  • 2 whole Eggs
  • ½ cups Vegetable Or Canola Oil
  • 1 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1-¾ cup All-purpose Flour
  • ½ cups Granulated Sugar
  • ¼ cups Cocoa Powder
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Semi-Sweet Chocolate Chips

Preparation

In a medium bowl, combine eggs, oil, milk and vanilla. Mix well.

In a larger bowl, combine flour, sugar, cocoa, baking powder, salt and chocolate chips. Make a “well” in the center of the dry ingredients. Pour the egg mixture into the well.

Fold mixture gently until all ingredients are mixed. Small lumps are okay.

Spoon into a greased or paper lined muffin tin. Sprinkle a couple of chocolate chips on top of each muffin.

Bake at 400ºF for 20 minutes. Remove from the pan and cool on a wire rack.

Pretty good, a nice substitute for Costco Muffins, they are not identical in sweetness, but very close. My girls enjoyed them. They are are the perfect size and looked gorgeous when they came out of the oven. I used organic cane sugar so I may experiment with adding just a touch more.

Recipe turned out perfectly. I used dark chocolate chips instead of semi sweet (to make them healthier, of course *wink wink*). I made a pan of regular sized muffins, and a pan of mini-muffins and they all turned out perfectly.

These were delicious and perfect. They came out wonderful. I just made them. They weren’t dense like Costco’s but I love the not to sweet chocolate muffins. They are overly sweet. They were moist and gorgeous.

Wonderful muffins! I make them almost every week for my DH to take for breakfast. I make them mini-muffins though and bake at 425 for 10 mins.
