Description

This muffin will surely cure any chocolate craving! It’s moist and oozing with chocolate! It also has zucchini in it, so it’s healthy, right?! Enjoy!

Ingredients

  • 2 cups Sugar
  • ½ cups Softened Butter
  • ⅓ cups Oil
  • 2 whole Eggs
  • 2 cups Grated Zucchini
  • ½ cups Milk
  • 1 teaspoon Vanilla
  • 3 cups Flour
  • 4 Tablespoons Dark Cocoa
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • 1 bag Chocolate Chips (12 Ounce Bag, I Like To Use Ghiradelli)

Preparation

Use three separate bowls for the following:

In your mixer (I use Kitchen Aid), mix sugar, butter, oil and eggs until smooth.

In a separate bowl mix the zucchini, milk, and vanilla. (wet ingredients)

In a separate bowl mix flour, dark cocoa, salt, baking soda, and baking powder. (dry ingredients)

Add 1/2 of the dry mix into the creamed mixture, then add 1/3 of the wet mix in. Alternate in the same order until all ingredients are in the big mixer bowl. Add a little over 1/2 of the bag of chocolate chips to the big mixer.

Get out 2 muffin tins, put muffin cups into tins and fill each cup with the batter, about 1/2 way up. Add the remaining chocolate chips on top.

Bake at 325F for 25 minutes. Let cool. Will make 2 dozen muffins. (These can be frozen after baking, just let them thaw and for best results put in microwave for 25 seconds prior to consuming!)

I’m sure there are a host of ways to make this lower in fat, blah, blah, blah. However, I made these yesterday and they were AMAZING!
Make sure you have 1 (or 2 or 3 like I did) WHILE they’re warm. I used half the amount of chocolate chips (because I was too lazy to open another bag) therefore the muffins didn’t get a sprinkling on top like the recipe suggests. However, I will be making these again!

I can’t say no to zucchini muffins. Looking forward to trying them with chocolate!
