Fluffy, chocolaty muffins with shreds of zucchini.
1. Preheat oven to 350 F.
2. In a large bowl, combine flour, baking soda, baking powder, cinnamon and salt.
3. In a medium bowl, combine the canola oil, applesauce, zucchini, sugar and vanilla.
4. Add the wet ingredients into the dry and stir until just combined.
5. Fold in the chocolate chips.
6. Divide batter evenly among 12 muffin cups and bake for 20-22 minutes, or until a toothpick inserted in the center of one comes out clean.
