Description

Delicious way to use those big overgrown zucchini from the garden. The chocolate chips add a special treat and sweetness.

Ingredients

  • 3 cups Flour
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 3 whole Eggs
  • 1 cup Vegetable Oil
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 3 teaspoons Vanilla
  • 1 Tablespoon Honey
  • 4 cups Shredded Zucchini
  • 1 cup Chocolate Chips

Preparation

Preheat oven to 350 degrees. Grease and flour three 8 by 4 loaf pans (I use metal).

Sift together the dry ingredients. In a separate bowl, beat eggs, oil, sugars, vanilla and honey together. Add sifted ingredients. Stir in zucchini and chocolate chips. Pour into prepared pans.

Bake for 50-55 minutes until tester comes out clean. Cool in pan on rack for 30 minutes.

Note: Do not drain the liquid out of the zucchini. The moisture from the zucchini makes this bread moist and delicious. If you want to make this healthier, you can substitute white whole wheat flour instead of regular flour, you can use 1/2 cup of applesauce and 1/2 cup of oil instead of a full cup of oil, and you can cut the sugar back to 3/4 cups of each white and brown.

Enjoy! This freezes really well.

I have made this twice and I really liked the chocolate chips in it!! I made half each time, and it was gone before I knew it!

Delish. I cut the recipe by thirds to make only 1, I first thought I screwed it up becuse before you add the zucchini the batter is VERY thick like a cookie dough not a batter but once you add the zucchini it loosens up and is perfect

This was so easy to make and so delicious. I did reduce the amount of sugar and I used half white flour and half regular wheat flour. The bread came out delicious, even my 9 year old loves it. Thanks for a great recipe!

I am saving this recipe to use over and over. The bread was fantastic! The only think I did differently was finely chop the chocolate chips because when they are chopped and the bread is warm they get melty and uber delicious!

Excellent zucchini bread!! I popped it in the fridge after baking so it chilled and that seemed to make the moistness stand out even more!
