Description

A moist and delicious banana bread worth trying!

Ingredients

  • 1 cup All-purpose Flour
  • ¾ cups Whole Wheat Flour
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ⅓ cups Margarine Or Softened Butter
  • ⅔ cups Sugar
  • 2 whole Eggs
  • 2 Tablespoons Milk
  • 1 teaspoon Vanilla Extract
  • 1 cup Mashed Ripe Bananas
  • ⅔ cups Shredded Coconut Or Chopped Nuts (optional)
  • ½ cups Mini Chocolate Chips

Preparation

Preheat oven to 350 degrees.

In a large bowl, mix together the flours, baking powder, baking soda, and salt; set aside.

In your mixer, beat together the butter and sugar, scraping the bowl often. Then add the eggs, milk and vanilla until blended together. Add in the mashed bananas. Next, add in the flour mixture and mix well.

(Optional: You may also add in 2/3 cup of coconut or 2/3 cup of chopped nuts.)

Next add in the chocolate chips, and turn batter into a lightly greased 9″x5″x3″ loaf pan. Bake at 350 degrees for 45-50 minutes or until a toothpick comes out clean. Cool for 10 minutes in the pan. Remove from the pan and cool completely on a wire rack. For easy slicing, wrap and refrigerate overnight. Makes about 20 slices.

We made these last night, well we made muffins. They only took about 25 minutes to bake and they were delicious. I will definitely make them again, thanks!

SO yummy!! I had three over-ripped bananas and did not know what to do with them so I came to TK in search of a recipe. The coconut in this recipe caught my eye and I decided to give your recipe a try. I’m so glad I did! Hubby, Toddler and myself gobbled up an entire loaf in a matter of three days, thankfully we still have a loaf left for this weekend (I split the batter in to two bread pans). Thanks a bunch!

I had a bunch of overripe bananas and this was the perfect way to use them! I ended up using a bit more mashed banana than the recipe calls for on my second loaf, but it didn’t seem to change anything. The bread turned out perfectly moist and somehow had an airy quality to it while being a nice dense, banana bread. I didn’t have any coconut on hand, but next time I’ll be sure to add it in!

Thanks for such a quick and easy (and delicious!) recipe!
