Description

Easy, delicious, and a good way to use up those overripe bananas!

Ingredients

  • 2 whole Ripe Bananas
  • ½ cups Butter, Softened
  • ½ cups Sugar
  • 2 whole Eggs
  • 1-½ cup Flour
  • ¼ cups Cocoa
  • 1 teaspoon Baking Powder
  • 2 Tablespoons Milk
  • ¾ cups Semisweet Chocolate Chips

Preparation

Preheat oven to 350ºF.

Grease a loaf pan. Peel the bananas and mash them in a large bowl with a fork. Add the butter, sugar, and eggs and mix until combined. Sift in the flour, cocoa, and baking powder. Mix until smooth, adding enough milk (if needed) to give a reluctant-dropping consistency. Stir in the chocolate chips.

Spoon the mixture into your prepared pan and bake for 50-60 minutes or until an inserted knife comes out clean. Let stand in the pan for 5 minutes, then turn out onto a wire rack to cool.

This is fantastic served warm, while the chocolate chips are still soft and gooey! I usually make this recipe in 2 small loaf pans and often give them as gifts during the holidays.

I wish I could give this more than 5 stars, it has been come a staple, coworkers and friends have been begging me to bring this to potlucks. So easy and delicious, it is a great comfort food.
