This refreshing chopped salad was so tasty, my girls and I were fighting over the last serving. If you’ve never had jicama, it’s a slightly sweet, mild flavored, very moist and very crunchy root vegetable from Mexico. It’s also very high in fiber and Vitamin C. I can buy precooked barley in the freezer section of my grocery store. If you can’t find the precooked variety, I share simple cooking instructions below.

This was delicious! I made mini-loaves, so they only took about 40 to 45 minutes to cook. There’s nothing like fresh bread to go with dinner. Thanks for the recipe!

Whipped it up in a snap, the house smelled delish and the bread had a great texture and really yummy flavor. Used Peroni beer and longhorn cheddar this time, but can’t wait to try it with different brews and cheeses. Thanks for this great recipe!!

I tried this one last night and was not too crazy about it. I am not sure if it was the beer I used (Sam. Adams) but I tasted the baking soda in it yet I know for certain I used exactly the same amount per recipe. Also the cook time was way too long – I checked it at 45 minutes and the bread was too brown all over – just the middle was edible.
It did smell yummy while baking – just fell short of the expectations.
I may play around with this a bit more, reduce the baking soda or something.

justkris….I do not see baking soda in the recipe, do you think maybe you used the soda by mistake instead of baking powder? Oh that’s a bummer if you did, been there done that. I only noticed due to I was going to make this bread and read your review and was getting out my ingrediants and did not see the soda on the list. Sounds like your willing to try it again though so I wanted to point it out before you used the soda again, good luck!

ohhhhhhhh man this bread is SO GOOD!!! YUM!! I used Fat Tire beer and sharp cheddar cheese and it is AMAZING. I will say, I think my bread pan may have been a little small b/c it immediately puffed up over the top once it was in the hot oven and the butter spilled into the bottom and it started smoking up the place. I put a small cookie sheet underneath to try and save my oven. Anyway, I took it out a few minutes early b.c the top was getting a little too brown, but it was juuuuust right–about 42-43 minutes. I also used a little bit of dried rosemary sprinkled on top instead of parsley and I omitted the onion powder. MAKE THIS, I tell you. It’s easy peasy and delicious!
