Description

Bran muffins get such a bad rap, but everytime I make these my husband thinks he must have done something especially good to deserve them because they are so yummy. Moist and flavorful, and good for you too!

Ingredients

  • 1 cup Boiling Water
  • 3 cups Wheat Bran, Divided Use
  • 1-¼ cup All-purpose Flour
  • 1-¼ cup Whole Wheat Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • ½ cups Butter
  • 1 cup Brown Sugar
  • 2 whole Eggs
  • 2 cups Buttermilk

Preparation

In a small bowl, combine boiling water with 1 cup of the wheat bran; stir and allow water to absorb into the bran.

In a separate (large) bowl, combine remaining bran, flours, baking soda, and salt; set aside.

Cream together butter and brown sugar, then mix in eggs. Add buttermilk and all other ingredients. Stir until well blended.

Spoon into muffin tins (this recipe makes 24 standard sized muffins) and bake at 400 degrees for 15-18 minutes. Batter may also be placed in refrigerator for future use, stir batter well before baking.

Yield: 2 dozen

fyi I just made these substituting mashed bananas for the butter and a higher ratio of wheat flour and they turned out a great. The banana flavor was very slight. If you are looking to make them even healthier then that is a great option.

These are delicious. I was looking for a healthly AND delicious bran muffin recipe for myself and family members.
I added raisins and whole dried cranberries (just a handful of each) to the bran while it was soaking.
I also substituted Nutiva Organic Extra Virgin Coconut Oil for the butter, since we are watching our cholesterol here. it worked out fabulously!
Thanks for this great recipe that I will certainly use over and over and over again!

Mmm, these are really flavorful. Not your usual bran muffin. Made these last night and served it warm with a scoop of ice cream for dessert to boyfriend – he loved it. I also added blueberries – yum!

These look really good! I printed out this recipe yesterday before the photo was posted, but after viewing the picture, I really can’t wait to make these! They look delectable!

Great recipe. Moist. I added blueberries to the second dozen and they were great too.

These are awesome. Even my BF who believed he did not like bran muffins really liked these!. They are especially amazing warmed up a bit with just the tiniest smear of nutella..
It is a BIG recipe. I froze extras in baggies of six, and thawed them out overnight in the fridge when I wanted more, and that worked out great for me

I love these bran muffins. Much better than any recipe made from bran cereal. I make them a few at a time so they are fresh, and refrigerate the leftover batter.
