Description

It’s amazing how much these muffins taste like the actual pie itself. They’re crispy on the outside and custardy on the inside. The bourbon really shines in this recipe. They are absolutely yummy!

Ingredients

  • 1 cup Light Brown Sugar
  • ¾ cups All-purpose Flour
  • ¼ teaspoons Kosher Salt
  • 1 cup Toasted Pecans, Chopped
  • ⅔ cups Butter, Softened
  • 2  Eggs, Beaten
  • ¼ cups Bourbon
  • 1 teaspoon Vanilla Extract

Preparation

Preheat the oven to 350ºF. Grease your muffin pan.

In a medium bowl, stir together brown sugar, flour, salt, and toasted pecans. In a separate bowl, beat the butter and eggs together until smooth. Add the bourbon and vanilla extract. Stir to combine. Next, stir the wet mixture into the dry mixture until just combined.

Spoon the batter into the prepared muffin tins. Fill to about 2/3 full. Bake for 20-25 minutes. The muffins do not rise very high during the baking process. Don’t worry, this is completely normal.

Cool on wire racks for about 15 minutes. Pop them out of the tins with a butter knife. Enjoy!

Yummalicious!! These are so good and so easy to prepare. I used mini muffin tins and only cooked them for about 18-20 minutes and they were perfect. Thx for sharing!!

I made these muffins today, and couldn’t wait until they were completely cool, had to try one. They are so good….they have been added to my baking recipes. After they cooled down, I just had to have another…they are the best.

I had Bacardi Rum on hand and used it instead of Bourbon. These muffins are quick, easy, light in texture, full of flavor, and literally made my husbands eyes roll back in his head.
