Description

Banana Walnut Crumb Muffin Tops.

Ingredients

  • FOR THE MUFFIN TOPS:
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Sea Salt
  • 3  Very Ripe Bananas, Mashed
  • ¾ cups Sugar
  • 1  Egg
  • 1 Tablespoon Vanilla Extract
  • ⅓ cups Butter, Melted
  • 1 cup Walnuts, Chopped
  • FOR THE TOPPING:
  • ⅓ cups Brown Sugar
  • 2 Tablespoons All-purpose Flour
  • ⅛ teaspoons Cinnamon
  • 1 Tablespoon Butter, Cold

Preparation

Preheat oven to 375ºF. Lightly grease a muffin top pan

In a large mixing bowl, combine flour, baking soda, baking powder and salt.

In another large mixing bowl, combine bananas, sugar, egg, vanilla and melted butter. Mix in chopped walnuts.

Slowly combine the flour mixture into the banana mixture. Don’t over-mix! Spoon batter into a greased muffin top pan.

For the topping, in a small bowl, combine brown sugar, flour and cinnamon. Cut in cold butter until mixture has a coarse crumble appearance. Sprinkle topping over muffin tops.

Bake in a preheated oven for 18-20 minutes or until a toothpick inserted into the center of the muffin tops comes out clean.
