Take the stress out of holiday breakfasts with these easy-to-make, delicious muffins! Did I mention they’re vegan?
Line your muffin tin with papers (recipe makes 12 muffins), and set aside.
In a small bowl, whisk together the baking powder, baking soda, flour, cinnamon and nutmeg. Set aside.
In the bowl of your mixer, beat the butter and sugar until light and fluffy.
Add the mashed bananas, vanilla and milk. Beat until combined.
On low speed, mix in the flour mixture until combined.
Beat at medium speed for 1-2 minutes, until batter is smooth.
Fill the lined muffin tins with the batter. Let rest while you preheat the oven to 350 degrees F.
Once the oven reaches 350F, bake the muffins for 20 minutes, or until a toothpick comes out clean after sticking it into the center.
Let cool, and enjoy!
