Description

Bananas and Nutella are a perfect pair, especially when they come in a less-than-sinful muffin!

Ingredients

  • ¼ cups Unsweetened Applesauce
  • ¼ cups Sugar
  • ¼ cups Butter, Softened
  • 2 whole Large Eggs
  • 3 whole Ripe Bananas, Mashed
  • ½ cups Light Sour Cream
  • 1 teaspoon Vanilla
  • 2-½ cups Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Kosher Salt
  • 1 teaspoon Cinnamon
  • ½ cups Nutella

Preparation

Preheat oven to 350°F.

Using an electric mixer, cream together applesauce, sugar, and butter on medium speed until well blended, about 1 minute. Add the eggs, one at a time, beating well after each addition. Add mashed bananas, sour cream, and vanilla. Beat on low speed until blended, about 30 seconds. With a wooden spoon, stir in flour baking soda, salt, and cinnamon just until moistened and the flour has disappeared. Finally, swirl in the Nutella. Scoop batter into lined muffin tins.

Bake 22-24 minutes, until lightly browned and until the muffin springs back when gently pressed on top. Cool 10 minutes before removing to a wire rack. Makes 24 muffins.

These were totally delicious. I made them for my kids and brought some ton their friends and moms. Everyone went nuts! Will make them again.

Great flavor and moisture, but my muffins didn’t rise very much. Will try to fill less cups next time.
