Description

Using wholesome whole wheat flour, oatmeal and flax meal gives you plenty of fiber. The bananas, dark chocolate chips and walnuts are a yummy combination!

Ingredients

  • 1 cup All-purpose Flour
  • ½ cups Whole Wheat Flour
  • ¼ cups Flax Meal
  • ⅔ cups Brown Sugar
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ¾ cups Regular Oats
  • 1 cup Mashed Banana (for 1 Cup You'll Need 2-3 Bananas)
  • ⅓ cups Skim Milk
  • ⅛ cups Canola Oil
  • 1 teaspoon Vanilla
  • 2  Large Eggs, Lightly Beaten
  • ½ cups Dark Chocolate Chips , More Or Less Depending On Taste
  • ½ cups Walnuts, More Or Less Depending On Taste

Preparation

1. Preheat oven to 350ºF. If desired, line a muffin pan with muffin liners. Recipe makes 12 muffins.

2. In a large bowl mix all dry ingredients (flour through oats on the above list).

3. In a medium-sized bowl mix all wet ingredients (banana through eggs). Add the wet ingredients into the dry ingredients and stir until just moist. Fold in chips and nuts. Divide batter into muffin cups.

4. Bake on middle rack of the preheated oven for 10 minutes, then bake on the top rack about 7 to 10 minutes, depending on your oven. When done, the tops should be golden brown and a toothpick inserted in the center of a muffin should come out clean. If muffins were cooked in muffin liners, then let them cool slightly before serving. This allows you to pull the paper off easier.

Just made these, and they are really good! Sweet and a little chewy … a really nice (and healthy!) muffin. Also, very easy. I forgot to add the chocolate chips before I put the batter in the muffin tin, and I just put mini chocolate chips on top. Still good, but next time I’ll remember to mix them in. Thanks for the recipe!
