Description

This quick bread comes together in a flash. One bowl prep in the food processor. It is moist and most definitely a kid-pleaser.

Ingredients

  • 3 whole Bananas
  • ¾ cups Greek Style Yogurt, Plain
  • ⅓ cups Vegetable Oil
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt

Preparation

Get ready, this comes together really quick. Once you pop it in the oven, you’ll have plenty of time to shower and get the family going for the day.

Preheat oven to 350ºF.

In the work bowl of a food processor, pulse the bananas until coarsely chopped. Add the remaining ingredients and pulse until the batter becomes smooth.

Grease a loaf pan, pour in batter and bake for 1 hour 15 minutes or until tester comes out clean when inserted into the center of the loaf.

Cooks note: If you’re feeling fancy, you can sprinkle the top with coarse sugar or stir in some chocolate or peanut butter flavored baking chips. We sometimes sprinkle cinnamon sugar over the top. Yum!
