This is a recipe I got from my mom. I love the bits of banana in it.
Preheat oven to 350ºF.
Combine the sugar, eggs, oil, vanilla, and baking soda in a mixing bowl. Add the smashed bananas.
Mix in the flour and salt. Stir in the chunked banana. Add any extras you like (golden raisins are my favorite; I add a LOT). Pour into a greased loaf pan and bake 45–50 minutes, or until the middle is done.
Note: Depending on your oven, baking time could be longer. My oven stinks so it takes a little longer, but be careful because if you cook it too long, then the ends are dry. I don’t know about you, but I hate dry ends.
