Description

We love muffins at our house and I make a batch every two weeks or so. Nothing better for a quick snack or for breakfast with yogurt. This time of year there is so much wonderful fruit available and I had some great apples on hand so I decided to make a muffin using one of my favorite fruits. I replaced the canola oil in the recipe with applesauce to make it healthier. They are just as tasty and moist using the applesauce.

Ingredients

  • ¾ cups Applesauce (unsweetened)
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • 2 whole Eggs
  • 2 cups Flour
  • ¾ teaspoons Baking Soda
  • ¾ teaspoons Cinnamon
  • ½ teaspoons Salt
  • 1 cup Apples, Diced
  • ½ cups Walnuts, Chopped

Preparation

Preheat oven to 400 F. Grease a 12-count muffin tin and set it aside.

In a large bowl mix together applesauce, sugar and vanilla with a mixer until well blended. Add eggs. Beat for 1 minute then set it aside. In a separate bowl sift together flour, baking soda, cinnamon and salt. Add these ingredients into the mixer bowl. Beat until combined completely. Stir in chopped apples and nuts.

Spoon the batter into the muffin tins. Bake 20 minutes or until golden brown. Cool on a wire rack. Store in an airtight container. Makes 12.
