Description

This moist and sweet apple walnut flax bread tastes just like a slice of apple pie. It is moist on the inside with a nice crunch on the outside.

Ingredients

  • 1 cup Flour
  • ½ cups Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 pinch Nutmeg
  • ¼ cups Apple Sauce
  • 2 Tablespoons Apple Sauce
  • 2 Tablespoons Butter, Melted And Cooled
  • 1 cup Dark Brown Sugar
  • 1 whole Egg
  • 1 whole Egg Yolk
  • ½ teaspoons Vanilla
  • 1-½ cup Apples, Diced (about 2 Medium)
  • ½ cups Chopped Walnuts
  • 1 Tablespoon Flax Seeds
  • Raw Sugar, To Sprinkle On Top

Preparation

Preheat oven to 325ºF and grease a loaf pan (or 4 mini loaf pans).

In a medium bowl, combine flours, baking powder, baking soda, salt, cinnamon, and nutmeg and whisk to combine thoroughly. Set aside.

In the bowl of a stand mixer, combine applesauce (both amounts), butter and sugar and beat to combine thoroughly. Add egg and yolk to the creamed mixture and beat to combine thoroughly. Beat in vanilla. Turn mixer to low and add the flour mixture, a little at a time, beating until just combined. Stir in apples, walnuts and flax seed.

Scrape batter into the prepared loaf pan (batter will be quite thick) and spread evenly. Sprinkle the top with raw sugar.

Place the loaf pan into the oven and bake until a toothpick inserted into the center comes out clean, about 80–90 minutes (45 minutes for mini loaves). Let cool before serving.
