Description

These muffins are excellent in the fall months, but are great any other time of the year when you have a hankering for some spice flavor!

Ingredients

  • ½ cups Unsalted Butter
  • 1 cup All-purpose Flour
  • ½ cups Whole Wheat Flour
  • ⅓ cups White Sugar
  • ⅓ cups Light Brown Sugar
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Allspice
  • ¼ teaspoons Ground Cloves
  • ¼ teaspoons Freshly Grated Nutmeg
  • 2  Eggs
  • 1 cup Unsweetened, Plain Applesauce
  • Turbinado Or Raw Sugar, For Topping

Preparation

Preheat oven to 350ºF.

Put the butter in a small saucepan and cook over medium heat untiil it turns brown. Keep an eye on it, because it will go from perfect to burned really quickly!

While the butter is cooling, add all of your dry ingrediients in a bowl and stir with a whisk to combine.

In a small bowl, combine the eggs and applesauce, and then slowly drizzle in the browned butter. Add the applesauce mixture to your dry ingredients and stir until just combined. Don’t overmix!

Use an ice cream scoop to evenly distribute the batter into your muffin tin, lined with muffin liners. Top with the turbinado/raw sugar, if desired.

Bake for 17-20 minutes, or until lightly browned and when a toothpick is inserted into the middle, it comes out clean.

Enjoy!
