Description

Chewy trail mix bars perfect for a post-yoga treat … or anytime!

Ingredients

  • 1 cup Honey
  • 2 teaspoons Vanilla Extract
  • ¼ teaspoons Salt
  • 2 Tablespoons Granulated Sugar
  • ¼ cups Peanut Butter (chunky Works Best)
  • 1-½ cup Rolled Oats
  • ½ cups Oat Bran
  • ½ cups Unsweetened Shredded Coconut
  • ½ cups Sunflower Seeds
  • ¾ cups Dried Berry Blend (I Used A Mix Of Dried Cherries, Raspberries And Currants)
  • ½ cups Dark Chocolate Chips

Preparation

Combine the honey, vanilla, salt, sugar and peanut butter in a medium sized saucepan and bring to a boil. Reduce heat to simmer and cook for about four minutes, stirring occasionally.

In a large bowl, combine all other ingredients except for the chocolate chips. Pour the boiling honey mixture over the oat mixture and toss well. Finally, add the chocolate chips and fold together (being careful not to overmix and melt the chocolate).

Press mixture into a greased 9-inch pan and pat down with wet hands. Chill in the fridge for an hour, or until firm, before cutting into bars.

@Camillela,
are they allergic to almonds as well? If not, you can use almond butter. Or sunflower butter, cashew butter or soy nut butter? If they are allergic to everything, you can just leave it out! :)

Is there something else I could use in place of the PB? My boys are allergic. I thought about just leaving it out but didn’t know if the bars would stick together well without it.
