Description

Spicy Carrot Fries and cool as a cucumber Tzaziki Sauce.

Ingredients

  • FOR THE CARROT FRIES:
  • 8 whole Small To Medium Carrots
  • 3 Tablespoons Olive Oil
  • 2 teaspoons Curry Powder
  • ½ teaspoons Cayenne
  • 1 teaspoon Salt
  • 1-½ teaspoon Cumin Powder
  • FOR THE TZATZIKI SAUCE:
  • 1 whole Cucumber, Peeled And Diced
  • ½ Tablespoons Lemon Juice
  • 7 ounces, weight Greek Yogurt
  • 2 Tablespoons Dill
  • 3 Tablespoons Sour Cream
  • 1 teaspoon Salt

Preparation

Preheat oven to 425ºF.

In a large bowl, toss carrots with olive oil, curry powder, cayenne, salt and cumin powder. Evenly spread out on a baking sheet making sure that the carrots don’t overlap. Bake for 20-30 minutes, or until golden brown.

For the tzatziki sauce, add all of the ingredients to a food processor and blend until thoroughly incorporated. Transfer to a bowl and refrigerate for 15 minutes.

Yummy! I can see this working out with all different kinds of spices! :-)

These are really delicious. At first, I wasn’t going to make the sauce because I didn’t have any dill. I did make the sauce but substituted dried mint instead, the sauce is a must! Excellent recipe, the only thing, I might change next time is less yogurt, I like mine a little thicker.
