Description

A cool, slightly sweet alternative to pico de gallo. Serve with tortilla chips or over grilled chicken or fish. Divine!

Ingredients

  • 1 whole Pineapple, Peeled And Diced
  • 1 whole Mango, Diced
  • ½ whole Medium Red Onion, Finely Diced
  • 1 whole Jalapeno, Seeded And Diced
  • Fresh Cilantro, Chopped
  • 1 whole Lime, Juiced
  • Dash Kosher Salt
  • Dash Granulated Sugar (optional)

Preparation

Combine diced pineapple, mango, red onion, jalapeno, and cilantro. Squeeze in lime juice and add salt and sugar if needed. Stir to combine. Serve within an hour with tortilla chips or on top of chicken or fish.

Just made this with my “cook” Abby (3 year old granddaughter) she loves chopping so this was a great recipe to keep her occupied for a little bit.

It is DELICIOUS, even though we added extra jalapeno as ours didn’t seem to be too hot at all, until the LAST ONE!!! But it is the BEST pineapple salsa recipe!

We used tons of cilantro which just made it even better.

We ate some with chips and are serving it over mango habenero glazed chicken for supper tonight!

Definitely make this, you’ll want more!

I love this recipe. I actually mix some of it with a bar of softened cream cheese to make a great dip to go with crackers or chips.

I made this with chips for dinner last night and it was the perfect combination of sweet and hot! Next time I’m going to try it over chicken.

I prepared this today and all I can say is PERFECTION! My husband and I both loved it and are anxious to try it over many things. Tonight I served it over pan-seared salmon. I used the complete recipe exactly as shown in the step-by-step, and included the dash of sugar. It was refreshing and delicious. I also used the entire jalapeno, seeds and membranes, which added just a wonderful flavor with just the right amount of heat. Thank you, Ree, for yet another winner. My husband thanks you, too!

Really yummy! I served it with grilled halibut and tortilla chips. I noticed later on in the evening, my mouth was really sore after all the acidity from the pineapple, so I might use less pineapple next time and more mango.

This was delicious!! We served it with beef fajitas. I am definitely keeping this one in my recipe file. I added a little cumin.

LOVE THIS. I did not use the mango but used a whole pineapple instead. This is usually gone within 24 hours around our house. So yummy. I’ve made this twice before and once needed the sugar because the pineapple wasn’t the sweetest. The other time it was perfect without sugar. Amazingly simply and good.
