Description

Fresh, crunchy and cheesy. This taco dip assembles quickly for an easy, delicious appetizer.

Ingredients

  • 8 ounces, weight Cream Cheese, Softened
  • 2 Tablespoons Packaged Taco Seasoning
  • 1 can (15 Oz. Can) Black Beans, Rinsed And Drained
  • 1 cup Frozen Corn, Thawed
  • 1 cup Diced Red Pepper
  • ½ cups Shredded Cheddar Cheese

Preparation

1. Preheat the oven to 350 degrees F.
2. In a small bowl, mix softened cream cheese with taco seasoning until blended.
3. Spread cream cheese mixture into the bottom of a 9-inch pie plate.
4. Sprinkle black beans on top of the cream cheese mixture.
5. Layer corn over top of the black beans.
6. Spread the red pepper over the top of the corn layer.
7. Sprinkle the cheddar cheese over everything.
8. Bake at 350 degrees for 20-25 minutes, or until warmed through and cheddar is melted.
9. To eat, scoop with tortilla chips, or spoon into tortillas.

This was very good! I originally assembled it for our Superbowl party, but froze it once we saw that we had too much food! I brought it out this weekend when we had company and everyone inhaled it! Delicious! The peppers provide a nice crunch, while the corn and blackbeans give it a great flavor. Top that off with cream cheese, taco seasoning, and cheese, and you’ve got one heck of a snack!
