1. Peel every other length of the cucumber’s skin. Cut into quarters lengthwise, then seed. Finely dice, place in a colander, add salt, stir and let drain for 15 minutes.
2. Finely chop the garlic. Roughly chop the mint. Mix the yogurt and goat cheese until smooth. Add all the other ingredients. Season with salt and pepper, stir, and serve immediately or keep refrigerated.
